What is the Gluten Content Analyzer?

A system that washes starch from a dough ball to determine wet gluten and gluten index. It is the right choice for flour mills and bakeries that need objective dough strength data for wheat selection and blending.

Overview

The gluten analyzer uses a mechanical washing system. A weighed flour and salt solution dough is washed under a controlled water stream until the starch is removed, leaving a rubbery gluten mass that is weighed to give wet gluten as a percentage. The gluten is then centrifuged through a special sieve, and the fraction remaining on the sieve divided by the total wet gluten gives the gluten index, a measure of elasticity and strength. A drying unit can determine dry gluten and the water-binding capacity of the gluten. Some near-infrared instruments predict gluten content from spectra for rapid screening, but the washing method remains the reference for trade and baking specification. Results depend on flour mass, water temperature and washing time, so the standard procedure and equipment settings must be followed exactly.

How does it work?

Grain analysis uses several techniques. Near-infrared instruments measure the reflectance or transmission of light at selected wavelengths, and multivariate calibration models relate the spectra to protein, moisture, oil and starch content. Capacitance moisture meters measure the dielectric constant of a grain sample, which rises with water content, and are calibrated per species and temperature. The falling number apparatus gelatinises a ground grain suspension in a boiling water bath and times the fall of a stirrer through the paste, giving a viscosity-related index of sprout damage and alpha-amylase activity. Gluten content is determined by washing a dough ball mechanically to remove starch, or by near-infrared prediction, and gluten index measures its elasticity. Test weight, or hectolitre weight, is the mass of grain filling a standard volume, measured by a filling hopper and a calibrated container.

What are the key features?

  • Mechanical washing gives repeatable wet gluten results.
  • Integrated centrifuge determines gluten index and elasticity.
  • Optional dryer measures dry gluten and water binding.
  • Standardised salt solution and washing time match reference methods.
  • Digital balance and timers reduce operator variability.
  • Results support wheat blending and baking specification checks.

What are the technical specifications?

A typical gluten content analyzer configuration offers measurement of Wet gluten, gluten index, dry gluten, sample mass of 10 g flour (14% moisture basis), washing time of 5 min standard, centrifuge speed of 6000 rpm, 1 min, wet gluten range of 10–60% and gluten index range of 0–100. Values are indicative of the product class; the exact figures for each configuration are confirmed on the quotation and the calibration documents supplied with the instrument.

Which applications is it used for?

The Gluten Content Analyzer is used in flour mill wheat blending, bakery flour specification checks, wheat breeding quality selection and import and export quality inspection. Across the wider Grain Analysis class, laboratories also deploy it for grain elevator intake grading, flour and semolina milling control and feed ingredient quality control.

Which standards and certifications apply?

Relevant standards and methods include ISO 712 (moisture), ISO 3093 (falling number), AACC Method 56-81B, ICC Standard 105/2, ISO 21415-2 (gluten) and GB/T 5498 (test weight). Certification candidates for this model are CE, RoHS and ISO 9001 manufacturing; each is to be confirmed for the specific configuration before shipment, and certificates are supplied only where they have been issued.

Keep near-infrared instruments clean and free of dust, and run the daily check sample supplied with the calibration to detect drift. Store reference samples for the grain species in use and send periodic samples to a reference laboratory for biased calibration updates. For capacitance meters, control sample temperature and fill volume exactly, since both affect readings. The falling number apparatus needs a boiling water bath at a stable rolling boil, correct grinding and accurate timing to meet the standard. Grain samples should be representative, taken with a proper divider, and stored dry to avoid moisture change before analysis. Record instrument settings, sample mass and results so that data can be traced to the method used.

How do I select the right Gluten Content Analyzer?

Select the gluten analyzer when objective dough strength data is needed for blending or specification work. For rapid screening only, an NIR gluten prediction may suffice. In an RFQ, specify whether gluten index and dry gluten are required, the standard to be followed and the sample throughput needed.

How does it compare with other Grain Analysis variants?

Start from the parameters and the reference method required by the trading contract or the internal specification. For rapid multi-parameter grading at intake, near-infrared analyzers give protein, moisture, oil and starch in under a minute and suit high throughput, but their calibrations must cover the grain species, variety groups and moisture ranges encountered. For legally reported moisture, use a capacitance or oven method calibrated to the applicable standard. Select the falling number apparatus when sprout damage or alpha-amylase activity matters for milling and baking. Choose a gluten analyzer when dough strength is the key quality parameter for flour. Confirm sample presentation, calibration maintenance, reference laboratory support and the ability to update models as new varieties are grown.

Frequently asked questions about Gluten Content Analyzer

A gluten index above about 80 indicates strong, elastic gluten suited to bread, while values below 30 indicate weak, extensible gluten better for biscuits and cakes. Bakeries match the index to the intended product.
